Mexican Chocolate Bitters

Fill your infusing jar with a neutral spirit that is 80-110 proof. Add following ingredients.

  • Contents of Aromatic spice blend tin
  • 1 TBL (.1 oz) Ceylon Cinnamon
  • 1 TBL (.3 oz) cocoa nibs or unsweetened dark chocolate. 
  • 1 Small dried chili - Thai chili's work well. 

Seal jar and shake well. Store in a cool place out of direct sunlight. Shake every other day. After 5 days, open jar and taste for spiciness. If it's spicy enough, use a utensil to gently remove the chili. If you want it spicier, seal jar and resume infusion. Continue to taste every few days before shaking.  

At 21 days your bitters may be done. This part is subjective. If the first thing you smell or taste is the alcohol they need more time, up to 30 days. They are done when they're aromatic and delicious, plain and simple.
