Ingredients

2 oz Bombay Sapphire gin

1 ½ oz banana syrup*

1 oz lime juice, freshly squeezed

1 barspoon absinthe

3 dashes Hella Orange Bitters

1 egg white

Lime wheel, for garnish
Directions
Shake all ingredients with ice until well-chilled.
Strain ice out and re-shake without ice in a circular motion.
Pour into a chilled coupe glass. Garnish with a lime wheel.
Banana Syrup
Blend 3 underripe bananas with 1 cup Demerara sugar and 1 cup water. Add to a pot and bring to a boil, then reduce heat to low and simmer for 15 minutes. Strain and refrigerate.
