When the world's in turmoil but you're taking a month off from drinking, this mocktail will keep you motivated to keep up the good trouble.
Ingredients

1 tsp dried hibiscus

2 oz hot water
-
½ oz sage simple syrup*

Bitters & Soda Grapefruit

Sage leaf, for garnish
Directions
Make a very small cup of concentrated hibiscus tea by adding two ounces of hot water to the dried leaves.
Let cool and strain out leaves; discard.
Add hibiscus concentrate and sage syrup to a tumbler filled with ice.
Top with Bitters & Soda Grapefruit and stir gently.
Strain over new ice into a collins glass and garnish with a sage leaf.
Sage Syrup
In a small saucepan add four ounces of water and bring to a boil.
Remove from heat, add four ounces of granulated sugar and stir until dissolved.
Add 3-4 gently torn sage leaves and stir. Let sit for 30 minutes or up to 1 hour.
Strain leaves. Syrup will keep in a tight container in the fridge for 3-4 weeks.
